I actually don't know if cPanel's backup includes email forwarders and filters. I suggest asking at http://forums.cpanel.net. My guess is that it does include those things, as cPanel tends to be pretty thorough with its utilities. Let me know what the folks at the cPanel forums have to say, though.

Sorry, each registrar handles nameservers differently. I suggest contacting your registrar's support.
