Have you tried checking the error logs to see what the issue might be? In Plesk that's located under Websites & Domains > Dev Tools > Logs. This will list all the requests handled by your site, and any errors associated.

A common cause of 500 errors after moving to Plesk is the .htaccess files. A quick way to check if that's the issue is rename the .htaccess to something like .htaccess-old temporarily to see if the error goes away. There are some syntax inside .htaccess files that worked on cPanel, but don't work on Plesk. I may be able to enable the missing commands eventually. Getting new account creation set up is a higher priority right now though.
