You must backup all data by yourself. If you are using something like Wordpress or phpBB, they have built in backup functions. Otherwise, I suggest using FTP to copy all your data into your computer and then upload it to whichever host you decide to use. To use your domain with another host, just point your domain to that host.

You can also make a backup of your entire site at your cpanel. It will make a tar.gz file that gets dumped in your home directory. You can then move it to your public_html directory to give to your new host adminstrator.
